Heat up with our new veggie dish

Autumn is a time for comfort food. The leaves are changing colour, the days are getting shorter, and you can feel winter coming on its way. So what better way to enjoy this wonderous season than by preparing dishes with warming spices? Our new vegetarian dish, Boile Goats cheese tart with beetroot and spicy red onion marmalade, is going down well in our restaurant. It benefits from The French Rooms kitchen garden glut of beetroot. Our very popular red onion marmalade is so versatile it will feature on several dishes and specials over the coming months.

We love to share our recipes, and it is such a compliment when guests ask us about the dishes on our menu. Spicy red onion marmalade is a staple in Autumn/winter. It stores really well and can be used on Tart Flambees, Burgers, toasted sandwiches and cheese and charcuterie boards. Very easy to prepare and would make a lovely gift for a fellow foodie, it improves with age!

Spicy red onion marmalade

Ingredients
2kg medium red onions
4 garlic cloves (crushed)
4 tbsp Broighter Gold Rosemary & garlic infused rapeseed oil
1 cup caster sugar
Generous pinch of chilli flakes

Chopped thyme/rosemary
1 bottle red wine
250ml red wine vinegar
300ml port

Pinch salt & pepper

Method
Thinly slice onions, and add garlic. Add oil to a large, heavy-based saucepan over high heat. Pour in onion and garlic and stir well. Sprinkle over the sugar, thyme/rosemary, chilli flakes and salt and pepper. Give everything another really good stir and reduce the heat slightly. Cook uncovered for 40-50 minutes, stirring occasionally and ensuring the base of the saucepan doesn’t become sticky.


Pour in the wine, vinegar and port and simmer everything, still uncovered, over high heat for 25-30 minutes, stirring every so often until the onions are a deep mahogany colour and the liquid has reduced by about two-thirds.

Leave the onions to cool in the pan, then scoop into sterilised jars and seal.

Vegan alternative –

No problem, our puff pastry is vegan friendly and we simply substitute the Boile Goats Cheese for our own vegan cheese, equally delicious.
