Loaded fries are everywhere right now, and I love them. Lockdown has brought out the best in local take-outs and restaurants, many of who have pivoted to offer something different. Loaded fries feature on many menus across the North Coast, and are inspired by signature dishes, and it somehow works.
I’ve salivated over the thought of ‘Christmas dinner loaded fries’ over the festive period to a Peking duck loaded version that I can’t stop thinking about!. Sadly they are also loaded with calories and fat, fine if an occasional treat but worth exploring a healthier alternative.
With that in mind, I dusted off the Air Fryer lurking in the back of the cupboard and quickly produced a healthier version of loaded fries, which satisfied my craving without the guilt!.
What is your ‘load’ of choice?
The ‘load’ can be whatever you fancy. Cheesy sauce seems to be a popular choice with chicken, beef, prawns, and bacon, to name but a few. Toppings such as sour cream garlic mayo dip, crispy onions. Salsa verde, chipotle cream are also popular additions. We simply looked in our fridge, gathered up what needed to be used up, and found ourselves with the option of a cheesy Parma ham version with homemade pesto and a drizzle of mayonnaise.
- 375g potatoes (roosters) skin on then cut into wedges.
- Drizzle 1 tablespoon Broighter Gold chilli oil over them for taste
- Sea Salt & pepper seasoning & rosemary sprigs mixed well together
- 150 grams grated cheddar (choose the low fat versions)
- 2 slices parma ham thinly sliced
- 1 tablespoon homemade pesto
- 1 tablespoon low fat mayonnaise/creme fraiche (low fat)
Preheat air fryer. Place all potato wedges in fryer, try not to overlap and cook 20 minutes until browned through, you are aiming for crispy on the outside and fluffy in the inside. Add cheese, ham and pesto on top of wedges and place in the oven for approx. 8 minutes until cheese is melted. Serve immediately with mayo or crème fraiche.
